2 MANGOES
1 HABANERO OR JALAPINO CHILI
PEPPER (minced)
1 CUCUMBER, peeled, seeded, and finely
chopped
½ RED BELL PEPPER, finely chopped
¼ RED ONION, finely chopped
1 Tbsp minced fresh or crystallized
GINGER
¼ Cup chopped fresh CILANTRO
3-4 Tbsp LIME JUICE
12 Tbsp LIGHT BROWN SUGAR
Peel mangoes, cut flesh off seeds. Cut
mangoes into 1/4” pieces.
Put in bowl. Add chile peppers, cucumbers, bell peppers, onion, ginger,
cilantro, lime juice, and brown sugar.
Toss to mix. Can add more lime juice and brown sugar.
