AUNTIE'S LEMON CAKE

Slow Cooker Roast Pork with Fruit (4/10/04)

1 medium round onion (sliced)
1 boneless loin pork roast, 2 to 4 pounds
1 pkg. (8 ounces) dried fruit piece, (the sliced not the diced, as the diced will overcook and become part of the sauce) Should be about 1 1/2 cups.
1/2 cup apple juice
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

Layer the onion in a 4 to 5 quart slow cooker. Place pork on the onions, top with dried fruit. Mix the remaining ingredients, pour over the fruit and pork.

Cover and cook on low heat setting for 7 to 9 hours, or until pork is tender.
Serve fruit mixture over the pork.

2 SPAM recipes for 1/31/04

Eggs Benedict
When making this recipe, with English muffins, poached egg, and cheese sauce, instead of using ham, use Spam. I slice the Spam thin, slightly pan fry them and use several slices. Gives an entire new taste to this dish.

Breakfast Soufflé
1 can diced Spam
9 eggs, slightly beaten
3 cups of milk
1/2 t. salt
1 t. dry mustard
3 slices bread-cut in 1/4" cubes
1-1/2 cups grated cheddar cheese

Mix milk, eggs, salt and mustard, stir in bread, Spam and cheese. Pour mixture into a 13x9 pan, sprayed with Pam. Cover and refrigerate OVERNIGHT. Bake UNCOVERED 350 degrees, for 1 hour.
If you don't eat meats of any kind, you can omit that ingredient.
My family likes cheese, so I usually sprinkle grated cheese over the mixture right as it comes out of the oven. I always use this recipe when I have family over for breakfast, or when we are invited to a potluck brunch.

BREAD AND COOKIES

Here are the recipes for bread with the bread machine and Kei Sampson's Peanut Butter cookies.
I have a Hitachi Bread Maker, which is wonderful, when it is baking,
the smell of the bread is overwhelming.
Always use Only Fresh Ingredients, and use only Bread Flour, every bread machine has directions
and recipes for different kinds of breads. Whenever buying Yeast, make sure of the date on the package. And measure the ingredients accurately.
Usually the bread machine comes with it's own measuring cups and spoons.

Basic White Bread

3/4 cup tap water
2 cups bread flour
1 teaspoon salt
1-1/2 tablespoons sugar
1 tablespoon dry milk
1 tablespoon soft butter
1 teaspoon dry yeast or 1 pkg.

Put everything in the bread machine and it does the mixing, kneading and baking....
All you have to do is take it out, slice it, put butter and guava jam on it and enjoy,
with a big cup of Aloha Joe's coffee.

This next recipe is from Kei Sampson of Canada.
It is quite a long recipe, for Peanut Butter cookies.

PEANUT BUTTER BLOWOUTS:

1-1/2 CUPS FLOUR
1 TSP. BAKING SODA
1/4 TSP. SALT
1/2 CUP CHUNKY STYLE PEANUT BUTTER
1/2 CUP MARGARINE, SOFTENED
1/2 CUP BROWN SUGAR
1/4 CUP WHITE SUGAR
1/4 CUP MILK
1 LARGE EGG
1 TSP. VANILLA
3/4 CUP CHOCOLATE CHIPS
3/4 CUP HONEY ROASTED PEANUTS
3/4 CUP COARSELY CHOPPED REESE'S PEANUT BUTTER CUPS

Preheat oven to 350 degrees

Combine flour, baking soda and salt, set aside. Beat peanut butter and margarine together in a large bowl, until fluffy. Add sugars and beat again until smooth. Add milk, egg, and vanilla and beat 3 minutes. Stir in flour mixture and mix again. Fold in chocolate chips and peanuts and stir well, carefully fold in the peanut butter cups.
Drop by teaspoon onto un-greased cookie sheets. Leave space between, as cookies will expand. Bake 10 to 12 minutes or until just brown. Cool 1 minute on cookie sheet, then remove to wire racks to finish cooling. Makes about 30 cookies. Do not over bake, or cookies will be dry and crumbly.

EGGLESS -  EGG Salad
1/17/04

2 pounds soft tofu (mashed)
1/2 cup soy-based mayonnaise - or if you can eat eggs, use the regular mayo.
3 tablespoons Dijon mustard
1 teaspoon cayenne
1/2 teaspoon turmeric
2 tablespoon chopped parsley
1 tablespoon chopped fresh dill
1/2 cup diced green onions
salt and pepper to taste

Place the tofu in a bowl and mash. Mix the remaining ingredients and combine well.
Chill, then serve on a bed of mixed greens or as a sandwich.
This is very good, I enjoyed it.

BEER BREAD

6 servings (Preheat the oven to 375 degrees)

3 cups self-rising flour
1/2 cup sugar
12 oz. beer
2 tablespoons melted butter

Butter a loaf pan and set aside. In a large bowl combine flour, sugar and beer and mix well. The mixture should be sticky. Pour into the loaf pan and bake for 55 minutes. The last few minutes, (about 3,) of baking, remove from the oven and brush the top of the loaf with butter and return to the oven to brown.

CORN BREAD

2 blocks butter or margarine, melted
4 eggs, slightly beaten
2 cups milk
1 cup corn meal
4 cups Bisquick mix
1 tsp. baking powder
1/2 tsp. baking soda
1 cup sugar

Mix all ingredients in a large bowl. Turn into a 9 X 13 inch greased pan, at 325 degrees for 35 to 40 minutes, or until done, use a toothpick to test.

Rocky Road Fudge
On-Air 12/20/03

1/3 cup unsalted butter, cut into chunks
1 cup evaporated milk
1 1/2 cups sugar
1/4 teas. salt
12 oz. semisweet chocolate, chopped
1/2 cup slivered almonds, toasted
1 cup mini marshmallows

Combine butter, evaporated milk, sugar, and salt in a saucepan. Bring to a hard boil to 5 to 7 minutes, stirring constantly. Remove from heat, stir in the chocolate until melted and smooth. Fold in the almonds and marshmallows. Pour into an 8 by 8 inch baking pan. Chill until firm, about 2 to 4 hours. Cut into 12 to 15 squares.
Great for Holiday gifts.

CHINESE RICE SOUP/CHUK: Chinese comfort food
(I don't measure when I make this soup, so I had to devise a recipe for it: )

Left over turkey bones (carcuss of turkey)
6 qt. water
1 chung choi (preserved turnip) in oriental markets. Rinse and chopped
1 thumb size fresh ginger, crushed
2 cups raw rice, washed and drained
2 large onions, chopped
1 lg. can chicken broth
2 1/2 teas. salt, 1/4 teas. black pepper
2 stalks green onion, for garnish (chopped)

In a large pot add turkey bones, water, ginger and chung choi, cook for 1 hour. Remove bones, debone meat, return turkey meat to pot. Add the onions, rice, salt, pepper, and cook for 1 1/2 hours. You want the soup the consistency of oatmeal. Add the chicken broth, cook for another 1/2 hour. Add the green onions and stir. Turn off heat. Serves about 10.

You should start the soup early in the day, as it takes several hours to cook.
This is so wonderful on a cold day or when your not feeling to well. My family always looks forward to Thanksgiving, because they know I will be cooking their favorite soup.

COOKIES - COOKIES - COOKIES
Jam Thumbprints

Makes 32 cookies

3/4 pound (3 sticks) UNSALTED butter, at room temperature
1 cup sugar
1 t. vanilla extract
3 1/2 cups flour
1/4 t. kosher salt
1 egg beaten with 1 Tbls. water, this is for the egg wash
7 oz. sweetened flaked coconut
Raspberry and/or apricot jam or Joe's favorite pumpkin butter!!

Preheat oven to 350 deg.

Cream together butter and sugar until just combined, add vanilla. Sift together flour and salt. Add to creamed mixture. Mix until dough starts to come together. Put dough on a floured board and roll together in a flat disk. Wrap in plastic wrap and chill for 30 minutes.

Roll the dough in walnut size balls. Dip each ball into the egg wash and then roll in the coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your thumb or finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is golden brown.
These are delicious..

Chinese Almond Cookies

1 1/2 cup Crisco shortening
3/4 cup sugar
1 egg
1 tbsp. almond extract
3 cups flour
1/4 t. baking soda
1/4 t. salt
red food coloring

Cream sugar and shortening, Add egg and almond extract, sift together dry ingredients, add to creamed mixture. Shape into walnut size balls, place on ungreased cookie sheet. Using thumb, press center of balls. (you can also flatten them with the bottom of a small glass, make sure you flour the glass bottom) Using the end of a chopstick, dot dough with red food coloring.
Bake at 350 deg. for 15 to 20 minutes.

I use parchment paper on my cookie sheets, the cookies always come out nice and golden, never burned at the bottom. And you can reuse the parchment paper, just wipe it off, and continue baking. You can find parchment paper in rolls on the baking shelves in your market.

Egg Foo Young
12/6/03

10 eggs, beaten
1 1/2 cup bean sprouts
1/2 large onion, diced
1 bunch green onions, chopped
handful of chopped ham or charsui (Chinese roast pork) opt.

Mix all of above, then add the following seasoning,
salt to taste
sesame oil (optional) 1 tsp.
2 tsp. wine
dash of black pepper

Add 2 to 3 tsp. oil in a large frying pan, let the pan get hot. Spread 1 cup egg mixture at a time. Add more oil, only if needed. Cook until both sides are done. Serve with hot rice. Good for a side dish or even a main dish. You can make smaller patties, for potluck, or even as appetizers.
You can also serve a brown gravy with this dish, or a dipping sauce.
 have even added can tuna or small shrimp to the mixture.

Cranberry Relish

1-1/2 cups sugar
3/4 cup water
3 whole cloves
3 whole allspice
2 (3inch) cinnamon sticks (break in half)
1 (12 oz.) bag fresh cranberries
zest of 1 orange

Combine sugar, water, cloves, allspice, and cinnamon sticks in a 4 quart sauce pan. Bring to a boil. Cook, stirring until syrup is clear and sugar is dissolved, about 3 minutes.
Add cranberries and cook until they begin to pop, about 5 minutes. Remove from heat, add orange zest and cool. Keep refrigerated at least 3 days before using, to let the flavors blend.
Makes 2 1/2 cups. Great for Christmas gifts.

A note: I also, add 1 cut up orange and cut up lemon to the mixture, when I add the cranberries and let that cook down. This is optional, but it does add a nice taste to the cranberries.

Thanksgiving or Christmas or ANY holiday turkey

Instead of buying 1 large turkey, buy 2 smaller birds, say instead of 1- 20#, get 2 -10#'s, that way you will have 2 of every thing. My family fights for the wings...

Cook your turkey on a cookie sheet, yes, a cookie sheet. When you cook your turkey in a regular roasting pan, the heat has to come up the pan, and hits the turkey at about the breast, which makes it dry, but if you cook it on a cookie or jellyroll pan, the heat will be distributed evenly.
Layer the pan (single layer) with carrots (halved), celery, and slices of round onions. Place the turkey on the veg. layer and roast as usual. (the veg. layer will act as a rack) Try a dry rub on the turkey, drizzle with a little olive oil and roast.

Peach Crisp

1/2 cup packed brown sugar
2 1/2 tablespoons cornstarch
1 teas. cinnamon
2 1/2 pounds fresh peaches, about 4 large, peeled, pitted and sliced into wedges.

Topping:
Make your topping first, then set aside.
In a small bowl, melt 3 tablespoons butter, (in microwave,) with a fork,
stir in 1/3 cup flour and 1/2 cup  packed brown sugar. Set aside.

Combine brown sugar, cornstarch and cinnamon, mix well. Toss peaches with sugar mixture. Turn into a 10-inch deep dish pie plate. Sprinkle with Topping. Bake on a cookie sheet in a preheated oven 375-degrees, 35 to 40 minutes. Cool, serve with vanilla ice cream...

Sounds...yummy!

Fig Soup

1 small rack of spareribs, have the butcher cut length wise, in 3rds.
1 thumb size crushed ginger
8 to 10 figs, peeled and cut in 4ths

Cut the ribs into riblets, put enough water just to barely cover the ribs, add the ginger.
When the ribs are soft, add the figs, let this boil until the figs have nearly dissolved, or have incorporated with the broth. I did not add salt, but did add pepper.
This is a strange tasting broth, but very good.
Greg, (Auntie's Hubby) added seasoning in his bowl.

Chicken and Broccoli/Rice Casserole

This is a recipe that you should prep, get all your ingredients together,
before you put it together.

2 to 3 chicken breast (cooked, boil in water, add a teaspoon of chicken base)
1 pkg. 16 oz. frozen broccoli (do not cook)
1 box flavored rice, cooked, any brand will do. ( I used the store brand, chicken flavored)
1 cup mayonnaise
1 can cream of chicken soup (Or any kind of cream soup, mushroom, broccoli)
Juice of 1 lemon
1/2 cup cracker crumbs (make your own)
1/2 cup graded cheese

1st - cook chicken - cut cooked chicken in bite size chunks
2nd - cook box rice
3rd - mix mayo, soup, and lemon juice
4th - grade cheese, and make cracker crumbs
5th - Mix cooked rice with broccoli, layer in 9 x 13 casserole
6th - Add cooked chicken on top of rice mixture
7th - Pour mayo mixture over the chicken
8th - sprinkle with cracker crumbs and graded cheese
Bake at 350 degrees, for 30 minutes
I don't make many casseroles, but this came out really delicious.

This makes a large casserole, it will feed at least 10 to 12 people.

FYI, Greg,
(Auntie's Husband) is not a casserole person,
but he liked this one, suggested I make a crust, like a pie crust,
the next time and use raw broccoli, cut up.
I only know we will be eating this dish for a few days..

RICE IDEAS FROM AUNTIE

As I mentioned on-air, some folks don't like PLAIN RICE...so, I have few suggestions for you.....
Mix Calrose rice with Jasmine rice for a different flavor and taste.
You can find Jasmine rice in most Oriental Stores.

Also, for a change of pace, try adding boxed flavored rice to the Calrose rice,
the "Uncle Ben's Seasoned Wild Rice" is an excellent blend.
Also, try cooking your rice with Chicken or Beef Broth instead of water.
Some one suggested using pineapple juice, it was OK, but I didn't like the taste or texture.

Tofu Pie

1/2 block soft tofu
1 (3 oz.) box Jello, any flavor
1/2 cup water
1 graham cracker crust
1 (8 oz.) Cool Whip

Drain tofu and squeeze out the water, (I use cheese cloth or a clean dish cloth)
Mash in a bowl. In another bowl, add hot water to Jello and stir until dissolved. Blend Jello and tofu in blender. Blend until smooth and pour into pie crust.
Refrigerate until firm and top with Cool whip.
This is a very refreshing dessert.

Malasadas
<mentioned on-air 5/24/03>
(makes 5 dozen)

1 pkg. active dry yeast
1 t. sugar
1/4 cup warm water
6 cups flour
1/2 cup sugar
1/ t. salt
1/4 cup melted butter
6 eggs
1 cup evaporated milk (can cream)
1 cup water
vegetable oil for deep frying
sugar & cinnamon (cin: opt.)

Mix yeast with 1 teaspoon sugar and add to warm water. Let stand for 5 minutes.
Sift dry ingredients together. Stir in melted butter. Beat eggs, milk and water together and add to flour mixture. Add yeast and mix well. Dough will be sticky, cover and let dough rise until doubled, then punch down. Let dough rise a 2nd time. Heat oil in deep fryer to 375 degrees. Pinch off golf ball size pieces of dough. Drop in heated oil and cook until golden brown on 1 side.
Turn over and fry until gold en on other side, watch closely, and do not overcook, or burn.
Drain on paper towels, roll in sugar/cinnamon mixture.

AJ NOTE:  Remember this ONLY makes 5 DOZEN - I can eat that many all by myself! :)


 

SUPER "ONO" BISCUITS
<on air 2/15/03>

2 cups self-rising flour
1/2 cup butter
1 cup whipping cream
1/2 teas. vanilla (add vanilla to the cream)

Cut butter into flour, with a pastry blender or your fingers, until crumbly. 
Add whip cream/vanilla mixture, stirring until dry ingredients are moist.
Put dough on a lightly floured surface, knead lightly (3 or 4 times). 
Pat or roll out dough, 1/2 to 3/4 inch thick. 
Cut with a 2 inch round cutter, place on lightly greased pan. 
Bake for 15 minutes at 400 deg. 
I brushed mine with a little cream, before I put them in the oven.

These are so easy to make and so Ono.

TOFU WITH GROUND MEAT OR GROUND TURKEY
on-air 2/8/03

1 BLOCK TOFU
1 LB. GROUND MEAT OR TURKEY
4 TBS SOY SAUCE
2 TBS SUGAR
2 TBS SAKE OR WHITE WINE
1 CARROT, FINELY CHOPPED
3 SHITAKE MUSHROOMS, SOAKED AND FINELY CHOPPED
2 EGGS
1/2 CUP FROZEN PEAS

BOIL TOFU, DRAIN AND MASH. COOK GROUND MEAT OR TURKEY, ADD SOY SAUCE, SUGAR, AND SAKE. ADD CARROTS AND MUSHROOMS. COOK UNTIL DRY. MIX MASHED TOFU, EGGS, PEAS AND MEAT MIXTURE. POUR INTO A GREASED (USE PAM) 8X8 INCH PAN. BAKE FOR 30 TO 40 MINUTES AT 375 DEGREES OR STEAM FOR 20 TO 25 MINUTES. 
THIS WILL YIELD AT LEAST 5 SERVINGS.

Makawao Mushroom Meatballs
On-Air 1/25/03

Large pkg. meatballs 
(I purchased them at Smart & Final, a wholesale market) 
buy the smaller meatballs ones.
1 large can mushroom soup
1/4 cup milk
1 crushed bay leaf
4 to 5 crushed cloves of garlic

Pan fry the meatballs in a large fry pan or wok, add 2 cloves of garlic at a time, 
and as the garlic browns, remove and add a new clove. 
Drain meatballs on paper towels, 
place in crockpot. Stir mushroom soup and milk
to a smooth consistency, add to crockpot with the bayleaf, 
you can also add a couple crushed garlic cloves.
Set your crockpot on low, and cook all night or on high for 4/5 hours.  
This will feed 25 to 30 people, so you might want to use only 1/2 of the package.

Sweet/Sour Mini-hotdogs
1/25/03

1 pkg. mini/hotdogs
2 to 3 bottles Sunluck Sweet/Sour Sauce, 
(or you can use any Sweet/Sour Sauce in the markets.)
garlic, crushed
1 can chunk pineapple, drained

Pan fry the hotdogs in a small amount of oil and garlic, 
drain on paper towels, put in crockpot, add sauce and chunk pineapple, 
set on low, leave overnight. This will feed approx. 5 people.

Aunties Lemon Cake
1/25/03

1 box lemon flavored cake mix
1 box lime Jell-O (dissolve in 1 cup hot water)
1/2 cup powder sugar
juice of 1 lime or 1/2 large lemon

Make cake in a Bundt pan, when cake is baked, poke holes (small) 
all over the cake, drizzle the lime Jell-O over the cake, cool, 
mix powder sugar with the lime/lemon juice, drizzle over the bundt cake. 
This is a winner..


COCONUT MOCHI 1/11/03

1  -  1  lb. pkg. (or 3 1/2 cups) mochiko (sweet rice flour)
2 1/4 cups sugar
5 eggs
2 tsp. baking powder
1 tsp. vanilla
1 tsp. lemon extract
1 to 1 1/2 cups coconut flakes
3 cups milk
1/2 cup butter, melted

Mix all ingredients thoroughly. Pour into a greased or "Pamed" 9 X 13" pan. Sprinkle with sesame seeds and bake at 350 deg. for 1 hour, 15 minutes. 
Turn mochi upside down on a cutting board and cut into any shape desired.
This is really Ono,
(delicious). A dear friend gave me this recipe enjoy!

SPRING ROLLS (1/4/03)
1 lb. ground pork (pan fry, and cool)
1 lb. cleaned and shelled shrimp, chopped fine
1 sm. round onion, chopped fine
1/2 t. minced garlic
1 shredded carrot
4 mushrooms, chopped fine
2 egg yolks
salt, pepper to taste, pinch of sugar
75 lumpia wrappers (
buy at oriental markets)
oil for deep frying

Mix all ingredients together, spoon 1 large teaspoon in middle of wrapper, 
roll out, seal with egg white. Deep fry until golden brown. 
You can add or delete any item.
Don't make the rolls to large.

SPINACH/SHRIMP SOUP

1 POUND CLEANED MED. SHRIMP
6 CUPS WATER
2 LARGE BUNCHES OF SPINACH OR WATERCRESS
(CLEANED AND CUT INTO 2 INCH PIECES)
MUSHROOMS (OPTIONAL) SLICED
SAUTÉ: 1 T. BUTTER, 1 SMALL ONION (CHOPPED), 
1 CLOVE GARLIC (MINCED), 1 SMALL PIECE OF GINGER (CHOPPED)
ADD SHRIMP, WATER, SALT/PEPPER TO TASTE, 
THEN ADD SPINACH OR WATERCRESS. 
COOK 5 TO 10 MIN

TOFU PATTIES

1 BLOCK TOFU
1 SMALL CAN SALMON OR CAN OF TUNA
1 EGG
3 STALKS GREEN ONION, (CHOPPED FINE)
SALT/PEPPER

WRAP TOFU IN A CLEAN DISHCLOTH AND SQUEEZE OUT WATER. MASH TOFU, ADD THE REST OF INGREDIENTS, FORM INTO PATTIES AND FRY UNTIL BROWNED. DRAIN ON PAPER TOWEL AND SERVE WITH ANY KIND OF SAUCE.

Tomato Salsa Dip
Given ON-AIR Saturday 7/27/02

5 whole tomatoes
1 large can peeled whole tomatoes
1 round (Maui) onion (sweet onion) 
Doesn't have to be a Maui onion - but it will taste better!
1/2 bottle Ortega Jalapeno peppers (or to taste)
2 teas. cumin powder

Dice everything, mix together, leave overnight for flavors to blend. 
Makes 3 quarts.
So you can actually cut the recipe in half.
This is a great dip!

Pumpkin Soufflé

2 cans pumpkin (not the pie pumpkin)
3/4 cup packed dark brown sugar
1 pkg. frozen coconut milk (defrosted)
2 eggs beaten

Mix all ingredients together, bake at 350 degrees for 1 hour. 
Test with butter knife, 
if comes out clean it is ready. Serve with whipped cream.

Cranberry Conserve

1 pkg. cranberries
1 lemon, cut both ends
1 large orange, cut ends

Cook cranberries according to pkg. instructions, 
add the chopped lemon and orange,
cook until all cranberries are popped, and orange and lemon 
have cooked down.
This is delicious with turkey or pork.

Kalua Turkey in a Crock Pot

1 med. size turkey breast
3/4 cup apple juice
2 tablespoons Kosher salt
3 tablespoons liquid smoke

Rub turkey breast with salt and liquid smoke, 
put in crockpot, add juice. Set for 8 to 10 hours on LOW.

This one is my favorite.
Peach Cobbler

1/2 cup butter (1 stick)
1 cup sugar
3/4 cup self-rising flour
3/4 cup milk
1 can sliced peaches in heavy syrup (28-ounce) undrained
Cinnamon for sprinkling

Place butter in a 2-quart baking dish. Place in preheated 350-degree oven until melted. Do not burn...Stir sugar and flour together, mix well. Slowly add milk and continue to stir to prevent batter from lumping. Remove hot baking dish containing melted butter from oven, be very careful, pour batter directly over butter in baking dish. (DO NOT STIR.) Spoon fruit on top of batter, then gently pour syrup from fruit on top. (AGAIN, DO NOT STIR). Sprinkle with cinnamon. 
The most important part of this dish is, NOT STIRRING THE MIXTURE.
Bake in preheated 350-degree oven 30 to 45 minutes or until golden brown. Batter will rise above fruit, and make a wonderful crust. Serve warm with vanilla ice cream or whipped cream. Serves 8..

I got this recipe out of the Cook's Corner, and tried it and it is delicious.
