Sweet Potato/Coconut Soufflé
 1 large can sweet potatoes (mashed)
1 can coconut milk
1/2 cup brown sugar
1 beaten egg

Mix mashed sweet potatoes with coconut milk, brown sugar & egg.
Bake @ 325 degrees for 1 hour.
